Today, we are pleased to share our recipe for Annie’s Cake, a beloved treat from our “Cooking with Rowe Spirit Cookbook”, and one of Chef Dan Ross’s favorite recipes from his time at Rowe. This bundt cake, lovingly prepared in our from-scratch kitchen, nourishes both body and spirit, embodying the warmth and care we pour into everything we do at Rowe.

Crafting Annie’s Cake: Rich in Flavor and Tradition

Ingredients:

Cake:
¾ cup white flour
¾ cup whole wheat flour
½ cup white sugar
1/3 cup sifted cocoa
1 tsp baking soda
1 cup water
1/3 cup canola or corn oil
1 tsp white vinegar
1 tsp vanilla

Filling:
10 oz. cream cheese
¼ cup sugar
1 egg
1 ¼ cups chocolate chips

Ganache:
(Chocolate Sauce)
½ cup heavy cream
¾ cup chocolate chips
Yield: l ¼ cups of ganache

Directions:

Preheat the oven to 350 degrees. You will need a large mixing bowl, a small saucepan, a small mixing bowl and a bundt pan or muffin tins. Grease the baking pan.

Chocolate Bundt Cake:

Sift flours, then measure.
Sift again into a large mixing bowl with sugar, cocoa, baking soda and salt.
In a small bowl, beat wet ingredients with a whisk.
Add to dry ingredients.
Pour into a well-greased bundt pan or muffin tins.

Chocolate Ganache:

In a small saucepan, heat cream to almost boiling.
Turn off heat.
Add chocolate chips and whisk until smooth.
Add more chips or cream for desired consistency.
Pour onto Annie’s Cake after it has cooled a bit.

This ganache is also good as frosting for other cakes as well, poured on as glaze or served as dipping sauce.

Cream Cheese Filling:

Cream sugar and cream cheese.
Add egg, and mix well.
Stir in chocolate chips.
Drop into the center of the cake or cupcakes.
Bake for 35 to 45 minutes.
Top with ganache and serve.
